Lauki delight(bottle gourd delight)

Lauki Delight
There might be just few people who actually enjoying Lauki(bottle gourd), and earlier,I belong to the same category but try this dish and I am sure you will just love it and it’s healthy too
Cooking time : 20 mins
Preparation time : 10 mins
Ingredients
1 medium sized lauki-cut in cubes
1 big onion-chopped
1 1/2 medium tomatoes-chopped
1tsp jeera(cumin)  seeds
1 green chilly
1/2-1 tsp chilly powder-according to taste
1 tsp turmeric
Coriander leaves
Salt to taste
1tsp oil
Method
I am using pressure cooker to cook as it’s easy to cook and also we require less oil
Add oil in cooker
Once it’s hot put pinch of hing and jeeya and green chilly
Now add onion and fry for sometime till its golden brown
Add tomatoes and cook for another 2-3 mins
Now add all dry masala like chilly powder, turmeric and little salt
Mix it properly and then add lauki
Add salt as per taste and mix properly
Now cover pressure cooker and wait for 2 whisle and then close the gas
Remove cooker cap and add coriander leaves
Serve with rotis or rice or paranthas

Simple yet very tasty vegetarian dish.. This can be made in just 30/40 mins span and that include washing, cutting, frying infact end to end work ;) try this out and let me know about your family members reaction :)
Time Taken : 30-40 mins
Preparation : 10 mins
Cooking time : 20-30 mins
Ingredients
1 carrot – cut in strips
1 Capsicum – cut in strips
200 gms Mushroom – I love them so used whole packet :) this can be optional or can be used 100 gms also
200 gms Paneer (cottage Cheese) – Again depends, can be added 100 gms also
ginger Garlic Paste – 1 tbsp (optional)
1 or 2 onions (medium size) – diced
1 1/2 tomatoes (medium size) – diced
1/2 cup green peas
1/4 cup sliced cabbage
1/4 cup -1/2 cup cauliflower – [I have not used in my recipe – missed]
1/4 cup french beans (optional)
1 tbsp Chilli powder – add according to your taste
1 tsp turmeric powder
1 tbsp coriander powder
1 tsp garam masala
salt as per taste
1-2 tbsp oil
Direction
Heat oil
add diced onions and let it fry till its light golden
then add ginger garlic paste and fry for 1 min
once done, add carrot, beans,cauliflower,peas and let it fry for 4-5 mins. Please cover your vessel while doing this process and mix occasionally
then add Mushroom and capsicum + little salt and let it cook for 10 mins – mushrooms will leave water so let this water get dried up (cover vessel & stir occasionally)
now add paneer and tomatoes and let it cook for another 3-4 mins and then add all dry masalas along with salt.
cook for next 3-4 mins and  vegetable is ready :) – This veg can be garnished with coriander leaves
Tips
tomatoes need to be added at the end as this will not slow down the cooking process
adding salt while frying onion can speed up cooking process and make onion softer fast

Ingredients :
Potatoes - 4 big
Tomatoes - 2 medium
Cashew Nuts - 6-8
Milk - 2-3 tbsps
Onion - 1 big
Oil - 1-11/2 cup for deep frying
Chilli Powder - 1/2 tsp
Coriander Powder - 2 tsp
Cumin Powder - 1 tsp
Garam Masala - 1/2tsp
cumin seed
salt
whole garam masala

Preparation :

1. Soak the Cashew Nuts in milk for about 20mins.
2. Take the potatoes, pressure kcook for one whisle and then peel them and cut them into half. Now scoop off the inside of the each half of the potato. Be careful the sides and the bottom of the potato is not cut. Scoop off all the pieces. Keep the shells and the scooped stuff aside.3. Now take the scooped potato in a bowl and fry them until its soft. Drain the excess oil, seeto it is mash well.Then add salt, garam masalachilli powder, cut green chillies, chat masala, coriander powder, coriander leaves, cut cashews, raisins and mix it well. Keep this aside.
4. Meanwhile in a heavy bottomed vessel, take the oil ( oil level should in such a way that, the potatoes are immersed in the oil), and when its hot, add the potato shell's one by one slowly and deep fry them. See to it that the inside of the potatoes are also cooked. This may take 5-7mins. Press lightly on the potato to check if they are done. Don't press them too hard, otherwise they may break.
5.Once they are deep fried, take them out and place them on a paper towel. Put them upside down so that any oil left in the shells is drained out completely. Keep them aside till they cool.
6.Now stuff in the mashed potato paste into the potato shells and keep them aside.

7. Now take the soaked cashew nut along with milk and tomato in a blender and blend them to a fine paste.
8. Take a wok, add some oil and when oil is hot, add the cumin seeds and whole garam masala. When they start to crackle, add the finely chopped onions and little salt. Add ginger garlic paste once the onions turn transparent or golden brown . Now add turmeric powder,cumin powder, coriander powder,chilli powder and mix well, then add little water so that masalas dont burn. Keep on stirring. Now add the chew nut-tomato sauce and cook it covered for sometime(2-3mins).add water as required ( you can add more water if want to have with rice). add cream to give more taste (optional). Once the raw smell goes off, now add the stuffed potatoes one by one slowly into the sauce. Keep stirring now and then and cook it covered for sometime. Cook for not more than 10mins as the potatoes are already cooked. Finally garnish with chopped coriander.
You can eat this with jeera rice or parathas of your choice.

Note : add cream and then potatoes just 5 -10 mins before serving
